BBQ Salsa
Ingredients:
•Mushrooms
•Onion
•Garlic
•Red and Green Capsicums
•Oil
•Mixed Herbs can be added later
Method:
1.Dice mushrooms, onion and capsicums.
2.Crush garlic and mix with oil.
3.Let infuse for about an hour.
4.Heat your BBQ Plate and start with the mushrooms and onions cook for about 5 minutes and then add the capsicums.
5.Stir to combine and when cooked (about 15 minutes) use as a side dish for meat or fish.
Comments:
This basic recipe can be adapted by adding mixed herbs to the oil, or by using a Salt Skipper stock powder to flavour as you wish. The basic recipe is good for most meats including beef and lamb. It is also great on hamburger buns instead of just straight fried onions. Keeps for about 2 days. Do not freeze. Can be prepared a couple of hours before use. Store in refigerator before use.
You can also include tomatoes, boiled and diced potato.
