Basic Curry Powder
Ingredients
•6 dried red chillies
•25g cumin seed
•1/2 tsp mustard seeds
•1 tsp black peppercorns
•1 tsp fenugeek seeds
•10 fresh curry leaves
•1 tbsp ground tumeric
Method
Remove the seeds from the chillies. Dry roast the whole spices over a dry heat until they darken, stirring or shaking the pan to stop them from burning. Leave to cool, then grind to a powder. Dry roast the curry leaves in the pan for a few minutes. Then grind and add them to the mixture with ginger and tumeric blending well.
Comments
You can use a moratr and pestle to grind the ingredients. You may also use an electric spice grinder but you may not be able to grind the whole quantity in one go. If this is the case remember to mix the finished product completely. Seal in an air tight container (preferably glass) and keep in a dark cupboard.
