Basic Italian Tomato Sauce

Ingredients:

•1 tbsp olive oil,
•1 medium onion chopped,
•1 clove of garlic,
•1 450g can of NAS diced tomato,
•140g of NAS Tomato paste,
•1/4 cup dry white wine,
•1/2 cup water,

Method:

1.In a large saucepan, heat the oil and gently fry the onions and garlic.
2.Add everything else and simmer for about 20 minutes.
Comments:

This is the basis for many dishes with pasta. It cooks in 20 minutes while you are cooking the pasta. it is teh equivalent of those jars you can buy in the supermarket, but costs a lot less to make and tastes better. You can pour it over or stir it through gnocchi, meatballs, any kind of meat or poultry or fish.

You can add capsicums at the frying stage, or cook seperately mushrooms or chunks of zucchini and stir them through just before dishing up. (They'll go soggy if you cook them for a full 20 minutes).

You can add any kind of chopped fresh herbs - torn fresh basil pieces added 2 -3 minutes before the end of cooking, it tastes devine. You can make batches of it and freeze in meal sized portions, but you really don't need to because it cooks so quickly.
