Beef Casserole

Ingredients:

•1 kg chuck steak cut into 4cm cubes,
?/2 cup seasoned flour (salt Skip vegetable stock works well with plain flour),
•1/4 cup olive oil,
•1 onion chopped,
•1 clove garlic crushed,
•2 cup salt Skip Stock Poweder mixed withw ater,
•1 cup red wine,
•1 tsp mixed dried herbs (Boquete Garni could be substitued instead of mixed herbs),
•1 large seet potato peeled and chopped into large pieces,

Method:

1.Pre heat oven to 180C,
2.Coat beef in seasoned flour by using a plastic bag with half the seasoned flour. #Toss cubes in the bag to coat. repeat until all beef is coated.
3.Reserve the left over flour.
4.Heat a fry pan and brown the beef , place in a casserole dish.
5.Add the remaining oil to the frypan and saute the vegetables.
6.Remove from heat and place vegetables in the casserole dish.
7.Return to the heat and add the stock, wine, pepper and herbs to the frypan and bring to the boil.
8.Reduce to a simmer until liquid reduces to 1/2 of the original quanity.
9.Add this stock to the casserole dish and place in oven.
Cook for 2 hours
