Beef curry and potatoes
Ingredients:
4tsp cooking oil
•1 1/4 chopped onion
•1 tsp grated ginger
•1 tsp mincedd garlic
•1 tsp corriander powder
•500g lean beef mince
•500g potatoes
•1/4 tsp chilli powder
•1 cup plain yogurt
•1 cup water
•1/4 tsp black pepper
•1 tsp lemon juice
Method:
1.In a medium sized skillet heat the oil and fry the onions until they are golden brown.
2.Add the ginger and garlic and fry them until they are brown (4 to 5 minutes).
3.Stir in the corriander powder while stirring constantly for 2 minutes over a medium heat.
4.Add the meat and fry for 15 minutes or until cooked.
5.Wash, peel and cube potatoes into 15mm cubes.
6.Add them to the meat and cook for a further 5 minutes.
7.Stir occasionally.
8.Add the chilli powder.
9.Stir in the yogurt.
10.Add the water and pepper and bring back to the boil.
11.Reduce the heat to a simmer. cover and leave for 20 minutes.
12.Check and then if cooked stir in the lemon juice just before serving.
Comments:
You could substitute lamb for beef.
