Beef Stock
Ingredients

•1.5kg beef marrow bones
•2 onions, quartered
•2 large carrots, cut into large chunks
•3 celery stalks, broken into 3-4 pieces each
•1 bunch of parsley
•1 bay leaf
•8 black peppercorns
•1/4 teaspoon dried thyme
•2 - 3 litres water
Method

1.Preheat oven to 230C.
2.Place the bones, onions, carrots and celery into a roasting dish on the top shelf of the oven for 45 minutes, basting occasionally.
3.Transfer them to a very large pot and add the rest of the ingredients.
4.Bring to the boil then simmer gently for 4 hours.
5.Allow to cool then strain into another pot or wide bowl.
6.Place in the fridge overnight then skim the fat off.
7.Stock is ready to use or freeze.
