Broccoli Soup

Recipe Name:

Broccoli and Cauliflower Soup

Ingredients:

•500g broccoli
•250g cauliflower
•1 onion, chopped
•1 clove garlic, crushed
•2 cups water
•100g potato, chopped
•2 stalks celery, chopped
•1/2 teaspoon dried marjoram leaves
•1 cup reduced fat milk
•1 tablespoon chopped fresh parsley

Method:

1.Cut broccoli and cauliflower into florets.
2.Combine onion and garlic in a large saucepan with 1 tablespoon water, stir constantly over heat until onion is soft.
3.Add remaining water, potato, celery, broccoli and cauliflower.
4.Bring to boil, reduce heat and simmer for 10 minutes or until potato is tender.
5.Add marjoram, place in a food processor and blend until smooth.
6.Return to pan, add milk and parsley, reheat before serving.
