Capsicum Relish
Recipe Name:
Capsicum relish
Ingredients:
•1 red capsicum, seeds and white membranes removed, and thinly sliced
•2 yellow capsicum, prepared as above
•1 tablespoon extra virgin olive oil
•1 tablespoon balsamic vinegar
Method:
1.Heat the oil to a medium temperature in a heavy based frying pan.
2.Add the sliced capsicum and cook gently, with pan partially covered, until soft - approximately 15 minutes.
3.Add the vinegar and cook uncovered for a further 5 minutes.
Comments:
The sweetness from the capsicum combines wonderfully with the balsamic vinegar and is excellent served with roasted meats, fish, poultry or pasta.
