Chicken and Sage

Recipe Name:

Chicken Mustard and Sage Casserole

Ingredients

•2kg chicken thigh fillets trimmed of fat and skinned
•1/3 cup flour
•¼ cup olive oil
•3 large leeks, washed and sliced into thick pieces
•2 cloves crushed garlic
•2 cups white wine
•1kg sweet potato cut into large pieces
•1 cup chicken stock
•zest of 1 lemon
•2 tbsp of Dijon mustard
•Pepper
•1 tbsp of chopped sage

Method

1.Dust chicken in flour shaking off the excess.
2.Heat oil in frypan and brown chicken in batches. Transfer to a plate.
3.Heat remaining oil in the frypan and cook leeks and garlic together until the leeks have softened.
4.Add the wine and cook for 1 minute or until the alcohol has boiled off.
5.Place sweet potato in the bottom of the crockpot, add chicken and leek and garlic mixture. Add the remaining ingredients except the pepper.
6.Cover and cook on low for 6 to 8 hours or low for 3 to 4 hours.
7.Serve with rice and sage sprinkled over the top.
