Recipe Name:
Chicken and zesty thyme
Ingredients:
•1/4 cup olive oil
•2 tbsp of lemon juice
•1 1/2 tbsp roughly chopped fresh thyme leaves
•500g chicken tenderloins
Method:
1.Combine oil, juice an thyme in a shallow dish.
2.Add the chicken and coat them evenly with marinade.
3.Cover and refrigerate for at least 2 hours.
4.Drizzle a little oil over the base of a large baking dish.
5.Heat dish to 200C for 5 to 10 minutes.
6.Drain chicken from marinade and add to the hot baking dish. (Discard the marinade).
7.Then return the baking dish to the oven for about 20 minutes.
8.Turn chicken after 10 minutes until chicken is golden brown and cooked throughly.
9.Remove chicken from baking dish and serve with steamed vegetabels or allow to cool, cover and refrigerate until required.
Comments: This can be either a hot or cold dish. It can be prepared a day ahead if it is going to be served cold.
